Potluck Meatball Recipe

Here’s the meatball recipe that a church member used for one of our recent Sabbath potluck meals. She said that in order for the meatballs not to get too mushy, she would freeze them, put the sauce over it, and cook them together.

The Meatball recipe:
1-24oz can veggie burger or TVP, 1 c. dry & cover with water boiling
2 1/4 c. bread crumps
2 c. onion chopped fine
3 c. walnuts chopped
2 T. egg replacer
1-19oz pkg. tofu extra firm drained and mashed
1 t. garlic powder
1 T. soy sauce
1/4 t. liquid smoke

Mix well (may need to use hands to mix)
Roll into meatballs, place on cookie sheet, and bake at 350 for 30 minutes.

Sauce for meatballs:
1/4 c. oil
1/4 c. chopped onion
1/4 c. packed brown sugar (She used cane juice crystals)
1/2 c. lemon juice
3/4 c. apricot jam (spreadable fruit)
1 c. barbecue sauce
1 t. oregano

Mix well. Cover meatballs. Bake 20 minutes covered & 10 minutes uncovered.
