Butter Pecan Ice Cream Recipe!

This dairy free butter pecan ice cream made one person almost cry.

Now I know why. I had this ice cream with my meal, and oh, did it taste good. :)

Here’s the recipe:

1 can coconut milk
1/2 cup raw cashew nuts
1/2 cup honey
1 tsp. Butterscotch flavoring
1/2 tsp. salt
1/2 tsp. guar or xanthan gum
1 tray ice cubes
Water as needed to make 5 cups total mixture
1/2 cup pecan pieces

1. Blend all the ingredients except the ice cubes until it’s a smooth consistency.
2. Then add the ice cubes to the mixture, and add water under the blender mixture reaches 5 cups.
3. Pour the mixture into an ice cream maker, or freeze it in a container and thaw it a little before serving.
4. Make sure to take the mixture out of the ice cream maker and put it in another container so particles don’t stick to it. Place it in the freezer.
